Sausage casserole | Slimming World - hot.onlinerealmoneygames.xyz

Hey everyone, so for the past few weeks I haven't had a lot of time during the week to be as culinarily creative each day, so I wanted to find something that I could make a ton of and have it last me awhile, while also covering all of my usual macro needs. What I ended up doing was an enormous baked egg casserole, composed of the following:

Roughly 2.5 dozen eggs
Two full heads chopped broccoli
A third of a block of pepperjack, sliced thin
Quorn turk'y log sliced thin (substitute any of your favorite meat substitutes here, but I prefer anything that comes close to thick sliced ham. Veggie sausage is a great choice, but if you're going to use it, cut it thick and brown it in a frying pan a little bit beforehand)
Butter
Garlic powder
Salt
Pepper

First, preheat the oven to 375. Then, in a big mixing bowl, add all the eggs and beat thoroughly. Add a tablespoon of garlic powder and a tablespoon of salt. Mix in a teaspoon of (fresh) black pepper. Loosely layer the broccoli and ham in a buttered large casserole dish and pour the eggs over it. Layer the pepperjack over the top. Bake in the oven for 20 or so minutes on the middle rack, and then check the center with a toothpick every 5 minutes until it comes out mostly clean. The edges will brown slightly. Some people don't like that toasted egg taste, so if you fall into this category, bake it at 300 for 30 minutes to have it more evenly cooked with less browning. Still, check regularly.
Anyway, either serve immediately for an awesome fat and protein dense egg casserole, or cover with foil and leave in the fridge cutting portions whenever you need them. Spoils in 3 weeks in the fridge. Each 3-4 inch by 3-4 inch portion (about 16-20) portions in my pan) contains ~425 (by best estimate) calories, with about 3/4's coming from fat and the rest from protein. Carb negligible.
Goes great with ketchup.
